ZUCCHINI SLICE

This is a simple and delicious meal that is so easy to whip up – and I bet you have had it before. Zucchini pie, tart or slice call it what you wish, it is a homemade classic that has been circulating for years. Here is a ‘healthy’ recipe alternative for the dairy and gluten intolerant and even options for the paleo inclined.

ZUCCHINI SLICE  – SF, GF, PALEO

1-2 medium zucchinis

1 medium sweet potato

2 tomatoes  (topping)

1 brown large onion

8 jumbo eggs

1 cup diced bacon or ham (left over Christmas ham works a gem)

1 cup almond meal (or any other flour alternative – I use spelt or buckwheat flour and it’s divine)

2/3 cup olive oil 

1 tsp ground cumin

salt and pepper

handful of pepitas or pine nuts (or both)

1/2 cup grated parmesan cheese (can omit for paleo diets)

 

METHOD:

Preheat oven to 180 degrees. Line a large baking dish with baking paper.  Grate the zucchinis and sweet potato. Place in a large bowl. Add the diced bacon/ham, finely diced onion and grated cheese.

In your food processor crack the eggs, add the oil and process until light and fluffy. Pour into bowl and mix through. Add the flour/meal, cumin, pepper and salt and stir with a wooden spoon until combined.

Pour mixture into lined baking dish. Top with sliced tomato and sprinkle with pepitas. Bake for 45 minutes or until skewer comes out clean.

5 WAYS TO PIMP YOUR PORRIDGE

A lot of people think that being healthy and fit means kale, spinach and flavourless food that can only be green.  But I will tell you now… you are wrong! Yes dark green leafy vegetables are vey high in iron, protein and fiber but there is much more to it. Healthy is not about cutting out food or denying yourself of yummy meals. It is about making healthy choices and choosing options that your body will benefit from… like oats! Just like the three little bears porridge was a staple in our family for breakfast during winter. Dad would always wake up and make the most amazing brew for the family. Call me crazy but I love a good sticky, gluggy, hot porridge especially when it is pimped with one of the below options. Don’t let your porridge be a bore or chore to eat. Try one of these divine combos!!

NOTE Classic porridge/soaked oats base recipe :

1/2 cup rolled oats, 1/2 cup milk of choice,  1 Tbs chia seeds and 1 tsp honey or maple to add some optional sweetness.

5 WAYS TO PIMP YOUR PORRIDGE

1. SALTED CHOC-PEANUT BUTTER

Who doesn’t love peanut butter? Especially when teamed with chocolate. Yep that’s right chocolate for breakfast, you read correctly. This choc peanut butter combo is to die for and packs a nutritional punch. Simply stir in 1-2 Tbs natural 100% peanut butter, 1 Tbs cacao powder and a pinch of sea salt to your next porridge brew once it is removed from the microwave or whilst stirring on the stove. Serve sprinkled with sliced banana,  peanuts and cacao nibs!! Mmmmmm and the final essential last touch… a spoonful of peanut butter!!!!

2. LAYER IT

Seems like all cute healthy things these days are served in jars and layered. The night before soak 1/2 cup oats, 1/2 cup milk and 1 Tbs chia seeds in a container in the fridge over night. In the morning pour/scoop half of the oats into a cute jar then add 1/2 a banana sliced up followed by a dollop of Greek yoghurt. Repeat – oats, 1/2 banana and yoghurt. Top with chia seeds, shredded coconut and a couple of blueberries. It looks cute in a jar because you can actually see the layers but it will still taste the same in a bowl if you don’t want to be super alternative and take an insta snap of it :)

3. CARROT CAKE STYLE

Love carrot cake? Try this healthy breakfast inspired alternative. On the stove heat up 1/2 cup oats, 1/2 cup milk and 1 Tbs chia seeds. After a couple of minutes add 1/2 grated carrot, 2 finely chopped medjool dates or a small handful of sultanas and a small handful of chopped walnuts. Serve with a dollop of yoghurt, shredded coconut, sprinkle of sultanas and extra walnuts on top. YUM This one is good soaked over night served cold too!

4. GO ‘NUTS’ WITH THE TOPPINGS

All about that crunch?? Top your porridge with a big dollop of yoghurt and some to die for crunchy maple cinnamon flavoured granola. >> RECIPE HERE. Don’t have time to make a granola – top with ANY nuts, seeds, shredded coconut, cacao nibs or chia. Anything crunchy and colourful is going to seal the deal.

5. EGGY

Ok so this one isn’t for the queasy stomachs or people who can’t (pregnant ladies) or wont digest raw egg. When your porridge is finished cooking on the stove or microwave, simply remove it and crack an egg into it whisking it up rapidly until it is nice and fluffy. Not only does the egg change the consistency of the porridge it also adds a dose of extra protein!

Now there is no excuse to be sitting there spooning a boring plain old porridge into your mouth. Jazz it up with one of the above combos and you won’t look back!!

CLASSIC CHOC-MINT SMOOTHIE

CHOC – MINT SMOOTHIE – serves 1

1-2 frozen bananas

Handful of mint leaves

3 Medjool dates

2 Tbs cacao powder

1 Tbs chia seeds

1 tsp vital greens or spirulina powder

1 cup almond milk

ice

Blend all ingredients in a blender until smooth and creamy. Pour into jar or glass and top with shredded or flaked coconut. Add straw and you are good to go !

2015 – LET’S DO THIS

Sorry to everyone for the LACK OF posting and commitment over the summer holidays. I was too busy soaking up the sun, spending time with my loved ones, eating amazing foods and having an absolute BALL back in my home city!!! BUT I’m back and have plenty of new and exciting things in store for you all.

Lucky for us, living in the beautiful country of Australia, means that our Christmas holidays are full of summer heat and beautiful coastlines. Many families escape to the coast for weeks of BBQ’s, beach walks, outdoor cricket, swimming, hammock time and other active living activities in the sun.

jumoYes I ate whatever I wanted. Yes I drank to excess (so not me). Yes I ate copious amounts of chocolate. Yes I nibbled all arvo long on cheese platters. Yes I REGRET NOTHING and yes I HAD THE BEST TIME!

The most important part about getting back from holidays, both mentally and physically is accepting the time off and then getting back into routine. But it’s not that simple. After having a month off your fitness levels will most likely have decreased (don’t worry this is easy to get back) and your body isn’t used to your normal training routine. You need to ease back into it. My first class back was a lovely ‘body balance’ mix of Yoga, Tai chi and Pilates, and let me tell you I was sore even after a few downward dogs and sun salutations.

 

DO’s and DONT’s FOR GETTING BACK INTO ROUTINE

DO:

  • Do take it easy. Ease back into the gym and allow your body time to recover and rest
  • Do drink lots of water. Aim for 2 Litres per day. Post on drinking water>> HERE
  • Do stretch your muscles after a workout. This is just as important as the actual workout. Post on stretches >> HERE
  • Do warm up and cool down where appropriate
  • Do make friends with salad. It’s the perfect time of the year for yummy salads. Post on festive salads>> HERE

 

DON’T:

  • Don’t over commit or set unrealistic challenges/goals
  • Don’t make silly resolutions and cut out food groups or ban certain foods. Telling yourself you will NOT eat chocolate will only make you crave it more. Everything in moderation!!!
  • Don’t think you will lose weight by eating less. Just eat right. Post on the ten foods you should be eating daily >> HERE
  • Don’t feel guilty for what you may or may not have don’t over the holidays. They are supposed to be enjoyed and indulgent. Post on indulgent eating and cheat meals 20% of the time >> HERE
  • Don’t compare yourselves to others. What might be your beginning might be someone else’s end.

 

Don’t worry if before Christmas you could do 10 push ups on your toes and now you can barely pump out 2. Good things take time – trust the process!

MANGO COCONUT MACADAMIA SMOOTHIE

This smoothie screams summer right here!! Not only is it the colour of the sunshine but it just makes you want to dive into it head first. Well at least for me it did!

Mango and coconut are a wonderful flavour combo and with the added creaminess of the macadamias you wont look back. Considered the worlds finest nut, the Macadamia is rich in energy and has a fantastic nutrient profile compromising of antioxidants, fiber, vitamins and minerals. Nuts are an excellent source of  protein and omega 3 fatty acids straight from mother nature. Add macadamias to your next smoothie or dessert or munch on a handful for afternoon tea.

MANGO COCONUT AND MACADAMIA SMOOTHIE

1 frozen banana

1/2 cup frozen mango pieces

1/4 cup macadamia nuts

1 Tbs chia seeds

1/2 cup coconut yoghurt

1 cup almond milk / coconut water (1:1 ratio mix if you like)

Ice

Place all ingredients in a blender and blend. Top with some extra nuts or shredded coconut. Add a scoop of protein for the perfect post workout recovery snack or breakfast on the go.

BANANA BREAD

Banana bread has seriously got to be one of the best things going around. Perfect for lunch boxes, morning teas or ‘bring a plate’ style picnics. It is so simple to make and without all the added butter and sugar of a regular loaf, this clean healthy recipe means you can toast it, microwave it or spread some peanut butter on it, totally guilt free anytime of the day.

BANANA BREAD – makes 1 loaf

3 large over ripe bananas mashed

3 eggs

3 Tbs honey or maple syrup

1/4 cup coconut oil melted

1tsp bi-carb soda

1tsp baking powder

3 Tbs dedicated coconut

2 cups almond meal or spelt flour

2 tsp cinnamon

1 tsp nutmeg

1 tsp vanilla extract

Extra: shredded coconut or banana sliced for decoration

 

METHOD: Combine all wet ingredients in a bowl. Add the dry ingredients and pour into greased or lined loaf tin. Place in preheated 160 degrees oven for 50 – 60 minutes until nice and brown. Keeps in fridge for 1 week.

Remember that it is a ‘bread’ so it is supposed to have a nice dark crust.

HOT TIP – I love to eat my banana bread microwaved and smeared with 1 Tbs peanut butter and 1/2 banana sliced topped with cinnamon. Heaven!

Slice up and freeze for morning tea!

COCO-NUTS FOR COCONUTS

Is it just me or is everything these days coconut based? Coconut milk, coconut water, shredded coconut, desiccated coconut, coconut flour, coconut nectar, coconut oil, coconut chips, coconut cream, coconut butter, coconut syrup, coconut sugar and coconut yoghurt. And there’s good reason for it too. Coconuts are a ‘wonder food’ and have so many health benefits that all humans need in their daily diet. In our western world, the coconut is an ‘health’ food consumed by the health conscious people. However, in other parts of the world people have thrived off coconuts for many generations. And it is no surprise that these people live for many more decades than us.

Straight from the tree as mother nature intended, coconuts have the highest concentration of electrolytes than any other fruit which makes it a superb source of hydration.

The oil from the coconut contains a unique combination of fatty acids with powerful medicinal properties. Previously, coconut oil has had a negative view as it contains saturated fat. (Post on the different types of fats HERE) Coconut oil is one of the richest sources of saturated fat known to man and also 90% of the fatty acids in it are in fact saturated. However, coconut oil doesn’t contain the regular saturated fats which you find in steak and cheese, and they are metabolised differently. Coconut oil is not only great for consuming, but can be used for cosmetic purposes to improve hair and skin appearance or be used as a toothpaste and mouth wash alternative. Fun fact; it is also proven to block 20% of the suns UV rays.

Because of the coconuts antioxidant properties and high nutrient content, they can be used to:

  • Lower cholesterol
  • Improve digestion (yes please)
  • Maintain youthful skin
  • Stabilise glucose levels
  • Increase your metabolism
  • Fight infections and viruses

  • Improve your memory
  • Regulate hormones
  • Lose weight
  • Increase thyroid function

Most things I bake contain some form of coconut and they are a great substitute for dairy or wheat ingredients. Although there is potential to go over board and make everything taste like coconut. I personally LOVE the flavour of coconut and don’t usually go a day without some form of coconut intake. However, I do understand that some people don’t like the taste and find it quite disgusting. There are so many ways to spice up your taste buds with some coconut, not to mention the added health benefits too. Coconut muffins, cakes, bliss balls, pancakes, slices, granola, topping for smoothies and for general munching on. Sarah Wilson author of I Quit Sugar, likes to have a teaspoon or two of coconut oil straight from the jar when she has sweet cravings or is a tad too hungry before dinner. Great idea. Spoon for the frying pan and a spoon for my mouth! It will only make you look younger and speed up that metabolism so what do you have to lose? Other than weight of course!

pb banana breadMonday morning!! A new week means new health and fitness goals. A lot of people spend more time worrying about what they ‘shouldn’t’ be eating and rather than focusing on fueling their body with nutritious wholesome super foods. It has taken my a very long time to get my diet right to suit my body, health and fitness goals and overall digestion. Everyone is different – portion sizes, food types, gluten vs no gluten, taste buds and snack frequency so there is no point copying the person next to you as what they eat may not be doing you any benefit. However, let’s not get too precise about what we should and shouldn’t eat and focus on trying to pack as much nutrient rich wonders onto our plate everyday.

Once you build your diet around healthy wholesome foods, you create a strong health platform for your body long term and leave less time for slip ups and binges or poor nutrition. Especially with summer and the bikini season about to hit (even though Canberra lacks in the beach department) now is as better time as ever to get our nutrition right!!

“DON’T EAT LESS – EAT RIGHT” Try adding these nutritional powerhouses to your plate daily!!

1. BERRIES; make friends with berries, and not any particular type – all of them! They are bright, super sweet, low in sugar and have a super high content of antioxidants and vitamins. You can eat them frozen, blended into a smoothie, on your oats, in muffins or with yoghurt. Make sure you have berries today!

2. COFFEE; hallelujah baby!! Not only is coffee exceptionally high in antioxidants there is also evidence that it can speed up our metabolism and promote fat loss and anti aging – sounds good to me.

3. YOGHURT; packed full of prebiotic goodness for overall gut health you cannot go past yoghurt. It can reduce bloating, constipation (yep I said the C word) and digestive imbalance.  For a strong overall immune system and healthy bacteria include yoghurt into your daily diet.

4. PEANUT BUTTER; I’ve said it once and I will say it again – get spooning that peanut butter!! Full of so many health and weight loss benefits, you cannot go wrong with PB. 2 Tablespoons a day will speed up your metabolism, give you energy to work out, keep you full and not to mention taste amazing. 2Tbs Peanut butter and banana bread for morning tea? 5. TOMATOES; full of beta-carotene and vitamin c, cooked tomatoes will give you a better daily dose of the nutrient lycopene, another powerful antioxidant with anti-cancer properties. So whose adding a tomato based pasta sauce or yummo lasagna stack into next weeks meal planning?

6. WALNUTS; all nuts have great over all health benefits to our skin, hair, body and metabolism but walnuts have the richest polyunsaturated fat content (this doesnt mean the ‘fattiest’ nut thought) which reduces cholesterol levels and has powerful anti-inflammatory benefits. Grab a large handful to chuck on your salad, oats or in your next baking session. Choc-walnut brownies anyone?

7. OILY FISH; tuna and salmon give the body a massive dose of omega 3 polyunsaturated fat much the same as walnuts. And you can grab a few cans to store in your work draw, handbag or pantry so there is no excuse not to get your daily dose.

8. BROCCOLI; rich source of folate and phytonutrient content well above other greens, broccoli makes for a perfect vege! Soups, dips, pastas, salads, stir fry’s or quiche – its a pretty versatile cute little tree so get plating it up!

9. APPLES; the old saying still goes ‘an apple a day keeps the doctor away’ and ain’t that the truth. Apples are packed full of soluble fiber, vitamin C and can satisfy hunger therefore promoting weight loss. Great for heart health, protecting against metabolic syndrome, dried apples (in particular) can boost exercise endurance, lower cholesterol and aid fat metabolising. Reach for that daily apple – especially teamed up with some PB for a super snack!

10. DARK CHOCOLATE; now this is the one sweet treat that I suggest eating frequently and nutritionists can back that up. If you are going to devour the block – make it dark chocolate with a high cocoa percentage. The higher the cocoa = the higher the antioxidants and more health benefits. Another great example of Kale and the Kettlebell’s health rule – the darker the better!

So NO MORE counting calories, restricting portions, crazy diets or binges. Eat right and eat more of the above foods daily – your body will thank you for it!
