
LEMON COCONUT PROTEIN BALLS
1 cup desiccated coconut (extra for rolling)
1/2 cup almond meal
2 scoops vanilla protein powder (vegan or whey it doesn’t matter)
1 tsp vanilla extract
1/4 cup coconut oil melted
1/2 cup cashew or almond butter
Juice and zest of 1 lemon
2 Tablespoons rice malt syrup

Blend everything in a food processor.
Roll into golf ball size balls. If it’s too dry add a dash of water. Roll in extra coconut. Place in fridge for 30 minutes to set! 1-2 balls per serve
