Ok, there’s not beating around the bush, this tart/flan was bloody awesome. The oaty crust was salty and crumbly and the two layers of apple goodness served hot with vanilla ice cream was just divine.
Got a dinner party or event and you need to supply the dessert? This one is for you. This delicious apple tart features an easy crust made with almond and oat flour. It’s gluten free, refined sugar free and easily made vegan/dairy free, too (just use coconut oil instead of butter). Recipe yields one tart, enough for 6 to 8 slices.
APPLE TART

INGREDIENTS
Oat Crust:
1 cup (135 grams) firmly almond meal/flour
1 cup (90 grams) oat flour (just whizz some oats in the blender until flour like)
1/2 teaspoon good quality sea salt
1/4 cup melted butter or coconut oil
3 tablespoons maple syrup or rice malt syrup
Apple ‘filling’ layer:
3 apples peeled and diced
3 Tablespoons maple syrup or RMS
2 Tbs butter or coconut oil
1 tsp vanilla essence
1/2 lemon squeezed
Cinnamon
Apple ‘topping’ layer:
3 apples sliced finely for topping.
1 Tablespoon coconut oil or butter
1 Tbs maple syrup or RMS
METHOD:
Firstly combine all ingredients for the oat crust. Using your hands combine into a dough. Wrap in glad wrap and place in fridge for 30 mins minimum. This will allow the dough to harden slightly making it easier to roll it out. Grease tart tin. Roll out dough with a rolling pin. Place into tart tin and press firmly around and into the edges. Cut off any excess. Prick some fork holes and place in preheated oven for 15 minutes at 180 Celsius.
For the filling dice up apples and steam or microwave them with water until soft. Blend together apples into a puree. Add the lemon, butter, syrup, vanilla and cinnamon. Pour this mixture into the tart tin.
Finely slice the remaining apples for the topping. Again steam or microwave them until soft (4-6 minutes…add a little cinnamon to the water too). Start around the edges and lay the apple pieces out just like the photo with slight overlapping. When you get to the middle it’s up to you what to do with the rest or how you want to decorate it. Melt the butter and syrup to make a glaze and brush that over the apples. Place tart in the oven for 30-40 minutes and serve warm. I baked mine for 30 minutes and then when it was ready for serving time I baked it for another 15 minutes and served it hot. My oven is also old and shit so times may vary. Just keep and eye on it. It won’t ‘overcook’ but you don’t want to burn it.
