If Christmas isn’t your favourite time of the year then maybe these will change your mind. Like wise if you aren’t the biggest choc mint fan… these jingle balls will definitely change your mind! They are my all time favourite protein balls and are a Christmas must! Perfect way to enjoy the silly season whilst maintaining your protein levels and reducing your intake of artificial sugars!
SPIRULINA CHOC-MINT BLISS BALLS
GF SF DF P V – makes about 24 large balls (golf ball size) – 15 minutes
16 medjool dates pitted
1 cup sultanas
1/2 cup goji berries (optional)
1/2 cup honey
2 cups almonds
1 cups cashews
2 Tbs cacao powder
1/2 cup Loving Earth cacao nibs or chopped Loving Earth Crunchy Dark Mint Chocolate >> BUY ONLINE HERE
Decent splash of peppermint essence/oil
4 scoops vanilla whey protein powder
2 Tbs spirulina or greens powder
1/2 cup desiccated coconut + extra for rolling
METHOD:
Place dates, sultanas and goji berries in food processor. Blend until smooth. Add almonds, cashews, cacao, peppermint essence, desiccated coconut and spirulina greens powder and whizz until further combined.
If mixture is dry – add some coconut oil. Otherwise persist with the blending. Once combined remove blade and roll into large golf ball sized balls. Roll in coconut, chia seeds or cacao nibs for extra crunch and store in the fridge or freezer. Will last 2 weeks in fridge and up to 3 months in the freezer. I personally eat them frozen but allow them to thaw slightly before serving!!
