When I think of winter and dessert I ALWAYS think apple pie or apple crumble. (that’s my dads influence for sure) The best part about living a healthy lifestyle is balance and enjoying the sweet things the right way. This apple crumble is seriously delicious and clean without any gluten or sugary nasties. Try it one night this weekend or the next time you are entertaining … or just feeling like a little winter dessert.
SUGAR FREE APPLE CRUMBLE
Serves 4 – GF DF SF P* – 40 minutes
APPLE FILLING
4 green apples
1 tsp cinnamon
2 tsp stevia (Natvia sweetener)
CRUMBLE
1/2 cup rolled oats
1/2 cup quick oats
1 cup shredded coconut
2 scoops vanilla protein
2 TBS chia seeds
2 tsp cinnamon
2 TBS stevia
1/2 cup melted coconut oil
almond flakes for topping
yoghurt or ice cream to serve
METHOD
Preheat oven to 180 degrees Celsius. Peel apples and slice them finely. Steam or microwave until soft 5-7 minutes. Mix in stevia and cinnamon and place in pie dish or deep baking pan.
In a bowl mix crumble ingredients. May need to add more oil to combine.
Pour mixture on top of apple filling and place in oven for 20 minutes.
Take out of oven and sprinkle with almond flakes. Place back in oven for 10 minutes (total 30 minutes baking) until golden brown and crispy. I threw a few cacao nibs on it too for an extra crunch.
Serve hot with ice cream or yoghurt
*PALEO – for a paleo option use 1/2 cup almond meal and 1/2 cup of quinoa flakes instead of oats. Serve with coconut yoghurt COYO or icecream.
