If you have a thermomix – you can have sorbet in the next 30 seconds. This lemon sorbet blend was another show stopper. You just need a super powerful blender or food processor and some fresh lemons.
PALEO LEMON SORBET
2 lemons juiced
2 lemons zested
700 gms ice cubes
1/2 cup Natvia sweetner or honey/maple
Optional drizzle of lemoncello liquor for the adults. Aperol or champagne would also be a nice addition. But keep it small or add more ice to compensate.
Place it all in a blender or thermomix and whizz it up. Persist with the ice cubes until a creamy texture. Serve immediately or will last in the freezer for 2-3 hours. The longer it sits in the freezer it will go less creamy and more icy like a granita.
