Ok pie lovers – here is my go to pastry / crust for an salt or sweet scenario. Made with blitzed oats and not a lot more it is the perfect healthy rustic base to your next pie or tart.
OAT FLOUR PASTRY
1 pie – serves 4-6 people
2 cups oat flour (just blended or blitzed oats)
1/3 cup olive oil
4 Tbs water chilled
sea salt
METHOD;
In a bowl add all ingredients together and mix thoroughly into a dough. Knead with your hand for a couple of minutes.
Place dough in fridge for 30 minutes.
Meanwhile pre-heat oven to 180 degrees Celsius.
Take dough out of fridge. Roll out onto some baking paper so it doesn’t stick to the bench. Might need some extra oat flour to sprinkle.
Press into tart or pie base. Prick some holes in the bottom and bake for 15-20 minutes. Take out and you’re ready for the filling…
