Another successful flavour bursting dish without nasty oils or gluten PLUS the recipe uses lots of hidden greens and is pretty damn easy. I have made this both with oat flour and flavourless protein powder from Neat Nutrition. Great way to incorporate whey protein into savoury dishes. Just make sure its Non flavoured and not vanilla !!
ASIAN GREEN PRAWN CAKES
Serves 2 -3 (with maybe some left overs depending on appetite) – GF DF SF – 30 minutes
1/2 head broccoli
1 mini courgette
3 eggs
2/3 cup coconut or almond flour. Or any flour
2 Tbs desiccated coconut
Splash tamari
Lime juice squeeze
Fresh ginger and fresh garlic finely diced
200gms cooked prawns
2 Tbs coconut oil
Ground coriander, turmeric, chilli flakes
METHOD;
Pulse broccoli and courgette in processor/blender. Place in bowl aside. Add ginger, garlic and spices. Whisk eggs – add. Add melted oil and tamari. Chuck the prawns in the bowl too along with the protein powder*, coconut and flour. Mix gently and then place into food processor for one final blend before cooking. Make sure you don’t over blend and turn into a puree.
Heat large fry pan. Spray with oil. Grab a scoop of the mixture and place it in the fry pan in a ball/patty shape. You can do 4 at a time. After 4 minutes flip over. When cooked place to the side of on an oven try to keep warm. You want the outside to be crispy but the middle to be soft.
Repeat until mixture is gone. Should make around 10 pattys depending on size.
Serve with Sweet Chili Sauce or a peeeeeerfect dipping sauce was COYO and tomato sauce (ketchup) mixed together. Try it !!! Heaven!

*You can sub the protein powder for any flour you have. I often use oat flour (blitzed oats) in my cooking and it’s great.
