So my mate is newly vegan and was coming over for dinner. I suggested I would whip up something using her favourite ingredient… coconut, and of course keep it vegan.
I started creating some vegan goodness using my Neat nutrition vegan protein powder, a whole packet of coconut and some other goodies in my pantry. I wanted to sweeten them somehow but don’t like honey or sugary sweeteners. I thought “ahh cacao that will do it” but then realised I didn’t have cacao left. So I grabbed the spirulina and chucked a bit too much of that in. I thought they were great. Turns out my coconut loving vegan mate absolutely despises spirulina (eye roll) so now I’ve got a bunch of delish green vegan balls for myself! Here’s the recipe;
SPIRULINA VEGAN BALLS
3 scoops vegan protein powder
1 cup desiccated coconut
3 Tbs coconut oil melted
Big splash of almond milk
1/2 cup almond meal
salt sprinkle
1 tsp matcha powder
1 Tbs spirulina (could probably rein that in a little)
Extra coconut to roll in.
METHOD; mix or blend together ingredients until dough like. You want it to be a little sticky so add a dash more almond milk if needed. Roll into balls and roll in more coconut to cover. Set in fridge. Should make about 15 large balls!
