I’m friends with the Easter bunny and he gave me his families secret breakfast recipe and here it is! The best damn carrot cake oats you can find! Who doesn’t love a meal with hidden veggies – get on it and Happy Easter!
CARROT CAKE OATS
Serves 2
3/4 cup rolled oats
1 carrot grated
½ cup sultanas
2 cups almond or coconut milk
2 Tbs chia seeds (can sub for ground flax if you don’t have/like chia)
2 Tbs shredded coconut
1/4 cup walnuts (could use any nut you like. Nut free? Sure use pepita seeds)
1 tsp cinnamon
1/2 tsp nutmeg
1 Tbs honey or maple
4 Tbs greek yoghurt for topping (vegan? Use coconut yoghurt)
Extra grated carrot, dates, walnuts coconut flakes for topping.
On the stove mix the oats with the milk and bring slowly to the boil. Add all other ingredients and place on a low heat for 7-10 minutes until thick and creamy. Pour half into each bowl or jar and top with some Greek/coconut yoghurt, grated carrot, walnuts and coconut flakes. Oh and a little sprinkle of cinnamon!
