HOT BIRCHER MUESLI

There’s no denying the mornings are getting colder and darker (in London) but that’s no reason to throw in the towel with healthy and quick breakfasts. Make a batch of this bircher which will last you 4 days in the fridge and you can have it prepped and ready to eat on the run or quickly heat in the morning. That’s right heat. Hot bircher is the new HOT thing. Otherwise if you are more of a play it safe gal and don’t like change, simply eat it cold. It’s just as delicious plus the cheeky spices will keep you warm inside.

BIRCHER MUESLI RECIPE – serves 4

2 cup oats

4Tbs chia seeds

2tsp cinnamon

1 tsp nutmeg

2 oranges freshly squeezed

2 scoops of Vanilla whey protein or plant based protein 

Milk or milk alternative (enough to cover the oats) 

1 large apple grated

2/3 cup coconut shredded

1/2 cup honey or maple syrup

½ cup goji berries

1 cup greek yoghurt

2/3 cup mixed nuts

2Tbs pepitas

Blueberries and banana sliced for topping

Extra cinnamon, coconut and honey

The night before or on a Sunday night in a large bowl combine oats, chia seeds, cinnamon, nutmeg, orange juice, apple, coconut, honey and goji berries. Stir until combined and pour enough milk so the ingredients are comfortably covered. Cover with cling wrap and leave in fridge overnight.

4 hours later or in the morning remove cling wrap and add the yoghurt. Pour in the nuts and seeds and stir until combined. Will serve 4 bowls or jars ready to go, just top with some cinnamon, honey, coconut, berries or banana. Get creative and enjoy!! That’s breakfast for the next 4 days sorted. 

The most important part about healthy eating is enjoying what you eat. I personally get excited lying in bed at night thinking about what marvelous creation I am going to whip up for breakky in the morning!! Try this protein packed breakfast guaranteed to fuel your awesomeness.

  1. Made this two weeks in a row! Definitely delicious and so good warm. I put less maple syrup and more apple (it was huge) the second time so it’s not as sweet but still super delicious and so damn easy! :) :) :)
