Macadamia + coconut apple crumble

Stop, drop and roll. This insanely delightful dessert also teams up as the best breakfast (with very little effort) the next day! You need my crumble in your life…

MACADAMIA COCONUT APPLE CRUMBLE

serves 4 – GF SF DF – 1 hour

 

ingredients

APPLE FILLING;

3 – 4 apples (4 small or 3 large)

Yep that’s it…

CRUMBLE;

1/2 cup macadamias

1/4 cup coconut flakes

1/4 cup desiccated coconut

1 Tbs vanilla whey protein powder @NeatNutrition

1 Tbs oats

1 tsp cinnamon

1/2 tsp ginger ground

1/2 tsp nutmeg ground

2 Tbs coconut oil

2 Tbs honey or maple syrup

method;

Option to peel the apples (I didn’t) but slice apples into small slices or chunks. Place in miscrowave dish with some water and steam. Can also boil on stove top. After 5 minutes when apples are soft remove and drain.

In a food processor place all crumble ingredients and pulse until wet and crumbly. You don’t want to over blend into a cookie dough mix. You want to keep it crumbly and nutty.

In a loaf tin or baking dish, add apples to base and press down. Crumb the crumble mixture on top. Place in oven for 25-35 minutes until brown and crumbly.

Serve warm with some yoghurt or ice cream. And try leave some left over for the next day because it makes the perfect sweet Sunday breakfast minus the sugar!
