Came home the other night craving carbonara. Whipped this ‘clean’ version up in no time. Mum used to make a cheesy mac for us when we were little and I remember the secret ingredients being tomato paste and worcestershire sauce. Trust me; its secret!
You can too make this insanely cheesy delish meal. Perfect for a big bowl and fork on the couch for a lazy night in.
CLEAN GOATS CHEESE CHICKEN CARBONARA
Serves 4
1 cup oat milk
2 Tbs oats or almond flour
1/2 cup grated goats cheese
1 Tbs tomato puree
splash of worcestershire sauce
2 large chicken breasts
4 rashers of bacon
4 servings of whole wheat pasta
1 cup mushrooms
1 Tbs coconut oil
2 whole eggs
Spinach
METHOD;
Let’s start with the white sauce. First of all put the oat milk and flour into a pot and simmer. The sauce should start the thicken. Don’t add all the milk at once. When the sauce is starting to thicken constantly stir and add the grated cheese slowly. Then add the tomato puree and the worcestershire sauce. Set aside OFF heat.
Heat the oil in the pan and add the diced chicken, bacon and mushrooms. When these are all cooked through and smelling divine set aside.
Now cook the pasta. I use wholemeal or spelt pasta but you can use what you like. You could also use zucchini pasta or boodles if you are wanting a lower carb meal.
Place the cheese sauce back on the heat and slowly re heat. crack the two eggs into the sauce and whisk around.
Now add the cheese sauce and the chicken mix to the pasta. Throw in some spinach leaves and serve hot with some Parmesan or extra grated goats cheese !!! HEAVEN !!!
