TUNA AND CORN SWEET POTATO PATTIES

Whipped these BRIGHT yellow tuna corn patties up the other night and with minimal clean ingredients they turned out an absolute treat. Super quick and super delicious considering they are so healthy. Perfect for lunch boxes, freezer dinners or even breakfast with some poached eggs. Make them this week – you probably have all the ingredients too.

TUNA AND CORN SWEET POTATO PATTIES

Makes 12 patties – GF DF SF – 60 minutes

2 medium sweet potatoes

1 180gm tinned corn kernels

2 180gm tins of tuna in spring water drained 

1 cup oats (blended into flour)

2 eggs

1 tsp turmeric ground

1 tsp chili flakes ground

 

METHOD;

Preheat oven to 180 degrees.

In a large glass bowl, place corn, tuna, spices, oat flour and eggs in a bowl. Mix until combined.

Peel and steam sweet potato. Mash into a puree. Add to the tuna and corn mix.

Mix all together. Roll into patties. Pan fry until browned each side 2-4 minutes.

Place on baking tray. Bake for 25-35 mins at 180 degrees until firm and cooked. They will still be a tad soft on the inside but the egg will cook through.

Serve 3-4 patties with some veggies or salad. We grated some hard goats cheese onto it too and it was divine. Perfect for lunches or freezable dinners.
