After trying a Matcha dark chocolate truffle for the first time – I was hooked. Matcha isn’t just a perfect cosy drink (blog post on Matcha and recipe for Matcha latte’s >> here) but it makes the PERFECT baking ingredient. A little goes a long way and can add the most stunning colours to your creations.
At first bite I demanded the recipe so I could whip some up at home and continue my addiction. But for a good reason. They are simply divine. If you like coconut – and dark chocolate of course – then you are going to love these. High in protein, super high in antioxidants and super high in deliciousness.
MATCHA PROTEIN TRUFFLES
Makes 24 truffles – GF P SF V* – 30 minutes
2 scoops vanilla whey protein powder
1 tablespoon coconut flour
2 tablespoons coconut oil
1/2 cup coconut butter / almond butter
1 cup plain yogurt of choice
2 tablespoons shredded coconut
1/2 tablespoon Matcha powder
2 tablespoons of agave / rice malt syrup
200gms dark chocolate
METHOD;
Place all ingredients – except the dark chocolate – into a food processor and pulse until well combined and sticky.
Roll into 12 even truffles.
Melt chocolate over the stove or in microwave until runny. Careful not to overcook/burn.
Dip each truffle into the chocolate and place on a lined baking tray.
Set in fridge for 30 minutes.
