After traveling for 4 months we have officially stopped and landed in London to get our life back on track and into a routine – ie time to get a job! BUT if there is one thing I am enjoying about being unemployed, it is the free time to get creative and experimental in the kitchen with my breakfasts. I have never really been overly successful with protein pancakes because I find they can be quite dry and the raw mixture is nicer than the final product… until now. After many attempts, here is my simple and delicious protein pancake recipe. You can make it what ever flavour you want by adding some additions or going NUTS with the toppings. Try it this weekend and let me know how you go.
BANANA OAT PROTEIN PANCAKES
Serves 1 – make 4 small/medium pancakes to stack – GF DF SF P
1 egg
1 banana
1/2 cup rolled oats
1 serve vanilla whey powder
splash almond milk (if necessary)
dash of honey or maple
METHOD;
Combine all ingredients in the blender or ninja/bullet and then pour into a hot fry pan greased with coconut oil in 4 portions. I find it easier to do them one at a time but if you are skilled enough and the fry pan is large you could attempt all 4 at once.
Top with greek yoghurt, maple syrup and all the toppings you can think of. I love peanut butter and cacao nibs, some extra banana slices or berries. And of course anything crunchy for the final touch!!
