CACAO ZUCCHINI MUFFINS

Give the gift of Zucchini this Valentines day with my awesome chocolatey zucchini muffins ! Great for the chocolate lovers and the healthy queens amongst us. Also great to bake for yourself!

CACAO ZUCCHINI MUFFINS 

Serves 12 – Gluten and Dairy Free – 30 minutes 

INGREDIENTS 

1 large zucchini grated

1 and 1/2 cups of almond flour or any flour you wish 

3/4 cup cacao powder 

1/2 cup coconut oil 

2 eggs 

1/2 cup honey or rice malt syrup 

1 tsp vanilla extract 

1 tsp baking powder 

1/2 tsp sea salt 

METHOD

Pre heat oven to 180 degrees. Grease muffin tin or prepare the patty pans.

Blend the eggs, oil, vanilla and honey. In another bowl mix the flour, baking powder, salt and cacao. Add wet ingredients and mix. Add zucchini and fold until combined.

Spoon into muffin tins. Bake for 22-25 minutes. You want the skewer to come out clean. Great for freezing or lunch boxes, or smashing three in one sitting!! Enjoy
