ORANGE POPPYSEED MUFFINS

We had a lot of oranges lying around and I hadn’t had an orange poppyseed muffin in yearssssss…. these are paleo and sugar free and didn’t disappoint. Very delish and easy !! These will taste just like your grandmas recipe but better!

 

ORANGE POPPYSEED MUFFINS

12 muffins – Paleo – sugar free – dairy free – gluten free

INGREDIENTS

2 cups almond flour 

1/2 cup coconut flour 

5 eggs 

2 oranges freshly squeezed 

zest of 1 orange 

2/3 cup melted coconut oil 

1 tsp vanilla essence 

1 tsp baking powder 

2 TBS poppy seeds 

1/3 cup honey or maple or rice malt syrup 

METHOD

Pre heat oven to 180 degrees. Get a muffin tin with optional patty pans ready.

Juice oranges. Add melted oil, eggs and honey and whisk together.

In a new bowl mix the dry ingredients and zest. Pour in the egg mixture and fold together. Scoop into patty pans and bake for 20 minutes at 180 degrees celsius.

Skewer should come out clean and muffins will look golden brown.
