If you have curry cravings like me and love butter chicken this is an awesome recipe which you can whip up yourself and it tastes just like the real thing. Plus you know exactly what goes into it (and it doesn’t contain unnecessary oils or fats) ALL HEALTHY !
HEALTHY BUTTER CHICKEN
Serves 4 – GF DF P
1 brown onion diced
2 Tbs coconut oil or ghee
500gms chicken breast diced
1 tin full fat coconut milk 400mls
1 tin light coconut milk 400mls
1 Tbs tomato paste
1 tsp Garlic minced or fresh
1 tsp Paprika
1 tsp Ground coriander
2 tsp curry powder
2 tsp garam masala
2 tsp turmeric ground
1 tsp chilli powder or flakes
2 Tbs Coconut flour (or corn flour) to thicken if necessary
2 tsp natvia sweetener sugar substitute. Can use honey
salt and pepper as you wish
A whole tree of fresh coriander ;) (I bloody love it)
Vegetables galore (I used broccoli and zucchini. You can cook it in the curry or serve it on the side)
Fry onion, garlic and all the spices and herbs in coconut oil. Add coconut milks and tomato paste. Add diced chicken and simmer for 30 mins. Add vegetables and simmer for another 30 minutes. Add coconut flour to thicken. The house will smell insane.
Make the naan bread too (note it needs to sit before cooking for an hour so prep the naan first then start making the curry)
Serve with basmati or brown rice and fresh coriander if you like. And of course the Naan!!
