APRICOT AND SUPER SEED POWER BALLS

These balls are the perfect high protein snack. They keep well in the fridge, and are totally nut free so safe for the school lunch box too. Chia seeds are a fab source of slow release energy and the protein powder with refuel you post workout or keep that tummy of yours full until dinner time.

APRICOT AND  SUPER SEED POWER BALLS – NUT FREE

Serves 12-15 balls – GF DF SF P – 20 minutes

INGREDIENTS

1/2 cup dried apricots

1/2 cup goji berries

1/2 cup pitted dates

boiling water

1/3 cup pepita seeds

1/3 cup sunflower seeds

1/3 cup chia seeds

4 scoops Neat Nutrition vanilla whey protein powder (if you don’t want to use protein powder you can use coconut or almond flour instead)

METHOD:

Soak fruit in boiling water for 1 hour. Combine dried fruit in a food processor and process until smooth. Add seeds and protein powder and pulse until a dough like consistency.

Leave in fridge for 10 minutes until slightly hard. Roll into large golf ball size raw balls. Set in fridge overnight. Perfect nut free lunch box snack for the kids or a grab and go post workout power ball for the adults (young at heart)
