So tomorrow is officially Shrove Tuesday which means WORLD PANCAKE DAY. A whole day dedicated to stacks upon stacks of pancakes and some serious Instagram pancake porn. I don’t know why but who is complaining? Yep – you better have a full belly if you are gonna scroll insta tomorrow because I guarantee it will make you hungry and in search of some pancakes stat. Well here is the good news. You CAN have your pancakes (and your abs) too! The best part about eating ‘healthy’ is finding new ways to create the foods you love with wholesome clean ingredients. In fact, pancakes have become a huge part of the recent #fitspo and #cleaneating motion taking over the world one ab selfie at a time.

SUGAR-FREE BLUEBERRY COCONUT PANCAKES
Serves 2 – GF DF SF P – 20 minutes
1 egg, lightly beaten.
1/2 cup coconut or almond milk
1 tablespoon melted coconut oil or butter, plus extra for frying.
1/3 cup buckwheat flour (can use wholemeal/spelt/oat)
1 teaspoon baking powder
pinch salt
1/4 cup shredded coconut, optional
1/4 cup frozen blueberries
full-fat natural yoghurt, to serve
extra shredded coconut, to serve
METHOD:
1. Combine egg, milk and oil in a mixing bowl.
2. Stir in flour, baking powder, salt and coconut until combined. Fold through blueberries.
3. Heat a generous amount of oil or batter in a frying pan over medium heat. Pour in some batter. When the surface begins to bubble, flip carefully and cook on the other side.
4. Repeat, until all the batter is used.
Serve with yoghurt and extra shredded coconut and some extra blueberries, fruit, nuts and seeds. I always go over the top with my toppings and end up hiding the stack of pancakes all together.
